I heat it by "frying" it in a skillet with just a touch of olive oil or OO and butter. If I want a soft polenta, I just serve it from the pot of course. Hope this helps. I vary the flavors that I use...freshly grated Parmesan is traditional and great. Herbs such as thyme and oregano are wonderful. Roasted red bell peppers, chopped finely, are amazingly good. Woodsy mushrooms...the flavor opportunities are endless.
