I had been in a lunch rut for some time now. And as I've mentioned before, I really love my lunches. I finally threw this little salad together, and I've probably had it about five times since then, it's so good! There is absolutely no brain work that goes into it, sauteed shrimp, tossed Caesar salad and you're made in the shade. Have it for lunch and then have it four times more!
Shrimp Cesar SaladIngredients1/2 cup raw medium sized raw shrimp, shells and tails removed
1 teaspoon old bay seasoning, or favorite seafood seasoning
1 cup spring mix, or Caesar salad mix, or chopped romaine lettuce
2-3 teaspoons creamy Caesar dressing
2-3 tablespoons grated Parmesan cheese
pine nuts (optional)
DirectionsToss lettuce mix, salad dressing, Parmesan cheese and pine nuts in a bowl. Place on plate. Saute shrimp in olive oil and seasoning until pink and fully cooked. Add to salad, get your Diet Coke on ice and enjoy your afternoon!

I dont know where to begin but I do know where it ends - as fat bastard would say "get in my belly"

This is great. My hubby loves shrimp and he loves caesar salad.
I should plan more lunches. This looks great!
That is a great looking salad... I especially like the old bay seasoning idea... well done post!
Your lunches look divine! I need to focus more on that time of day.
Anything involving ceasar is aces in my book.
This looks perfect for lunch. Great choice. Light and healthy.
Lunch is really a good meal (although breakfast is my favorite). Delicious salad idea! Way to mix things up.
Perfect lunch! Although I think I'd like a glass of wine with mine ;)
Sounds delicious to me! Laughed out loud when you said you probably ate it five times :D I do the same thing when I really like something. I hope you have a wonderful Thanksgiving. I'm getting ready to brine the Good Eats Turkey. I saw Anne Burrel brine hers two days before, then take it out of the brine and let it sit int he fridge for a day to dry out and then roast it. I'm excited to see how it turns out.
Nope, I'm just heading over to your house! You eat well for lunch!

I love Cesar salad.
How perfect! I hope you have a great Thanksgiving!
Super idea to put shrimp in that salad! Love the salad to begin with and you've added protein! Just what it needs.
Looks like your lunch rut is over! This salad looks really good.
Happy Thanksgiving to you and your family.
Grated Parmesan cheese on salad? With shrimps, too... Something I couldn't even imagine here in Italy... but I think I'll try it, as it looks so good. I think I'll use parmesan petals (os slices), instead. An maybe some balsamic vinegar (as we don't have salad creams). But be sure i'll try it in my kithchen. Good idea! Thanks and ciao!

I simply love shrimp and my all time favorite salad is the Cesar. The 2 together would be heaven on a plate.
Oh yum, I want some of this NOW! This looks so very tasty.
Now that's my kind of salad! The shrimp look plump and juicy.
I just started back to work and can use some nice lunch ideas. Thanks! :D
I love shrimp and can eat them at any time! The salad looks delicious especially with the Old Bay seasoning!
I could absolutely eat this five times! It looks soooooo good!!
I will definitely be making this soon for my salad loving husband! It looks great!
This does look tasty! My hubz might just get this for dinner!
I hope you don't mind, Teresa, but I linked to this post and to your blog today. I finally made your shrimp salad (it really DOES pay to print out recipes and look at them a few years later :) ). Yum. Thanks for the salad inspiration.
