Shrimp Cesar Salad
I had been in a lunch rut for some time now. And as I've mentioned before, I really love my lunches. I finally threw this little salad together, and I've probably had it about five times since then, it's so good! There is absolutely no brain work that goes into it, sauteed shrimp, tossed Caesar salad and you're made in the shade. Have it for lunch and then have it four times more!
Shrimp Cesar Salad
Ingredients
1/2 cup raw medium sized raw shrimp, shells and tails removed
1 teaspoon old bay seasoning, or favorite seafood seasoning
1 cup spring mix, or Caesar salad mix, or chopped romaine lettuce
2-3 teaspoons creamy Caesar dressing
2-3 tablespoons grated Parmesan cheese
pine nuts (optional)
Directions
Toss lettuce mix, salad dressing, Parmesan cheese and pine nuts in a bowl. Place on plate. Saute shrimp in olive oil and seasoning until pink and fully cooked. Add to salad, get your Diet Coke on ice and enjoy your afternoon!

ReplyDeleteSounds delicious to me! Laughed out loud when you said you probably ate it five times :D I do the same thing when I really like something. I hope you have a wonderful Thanksgiving. I'm getting ready to brine the Good Eats Turkey. I saw Anne Burrel brine hers two days before, then take it out of the brine and let it sit int he fridge for a day to dry out and then roast it. I'm excited to see how it turns out.

Grated Parmesan cheese on salad? With shrimps, too... Something I couldn't even imagine here in Italy... but I think I'll try it, as it looks so good. I think I'll use parmesan petals (os slices), instead. An maybe some balsamic vinegar (as we don't have salad creams). But be sure i'll try it in my kithchen. Good idea! Thanks and ciao!

I simply love shrimp and my all time favorite salad is the Cesar. The 2 together would be heaven on a plate.
