Creamy Enchilada Soup with Black Beans

My heart goes out to the victims and families in Boston.  I hope that they find peace and healing during such a difficult time. 

It's finally starting to warm up out there!  The sun is starting to come out and I'm sure we can all relate when I say that it feels like Prozac from the sky!  Oh how I love the sun.  But, it's still not too warm for another rich and creamy soup to keep us company during the cooler evening.  I made this after discovering a random block of cream cheese in my fridge.  I'm sure at some point I had a reason for purchasing it, but it had long escaped me, never to return.  However, I'm glad I did, because otherwise this soup never would have made it's grand entrance into our home.

I know I've mentioned this before, but I love salsa verde.  I love ANYTHING that calls for it, so I knew that I would love this soup before ever trying it.  It's got such a smooth texture, but a nice tangy flavor, making for a very satisfying meal.  The rice and beans really bulk it up too.  The only change I would make for next time is only adding a half a block of cream cheese instead of the entire thing.  It would be enough to make it creamy, but not quite as thick.

Creamy Enchilada Soup with Black Beans

Ingredients

32 oz chicken broth
2 cans of green enchilada sauce (I used Trader Joe's salsa verde.  It packs a punch, but I liked it.)
3/4 cup water
2 tablespoons ground cumin
1 tablespoon chile powder
1 teaspoon onion powder
1 teaspoon garlic powder
1 cup corn, canned, fresh or frozen
 24 oz chicken breast, cooked and shredded, or chopped
1 can black or white beans, drained and rinsed
1 block cream cheese (I used reduced fat), cut into cubes
3/4 cup dry rice
salt and pepper to taste

Garnish
cilantro
tortilla chips
cheddar cheese
avocado
green onions

Directions

In a large pan, combine broth, enchilada sauce, water, cumin, chile powder, onion powder,  and garlic powder.  Bring to a boil.  Add rice and lower heat to a simmer.  Cook for about 30 minutes, until rice is cooked through and soft.  Add corn (no need to thaw if frozen), beans, and chicken.  Cook for about five minutes.  Add cream cheese, stir until melted and combined.  Remove from heat, and serve.  Garnish as desired.

Bacon and Pepperoncini Stuffed Sweet Peppers

Around Superbowl time a friend and I were commiserating about the fact that our disinterest in sports excludes us from all the great sports fare.  So, our Non-Superbowl, Superbowl party was born.  It basically meant all the game food, none of the game.  Score for us!  (Yes, that's right, I'm not a sports fan, but I'm still a real nice gal, honest!)

Don't you love this colorful bouquet of peppers.  I like to consider this my attempt at being responsible, by bringing veggies that haven't been dunked in hot oil.  Instead they've been stuffed with cheese!  I'll admit that I took a small leap of faith making these, I'd never had anything like this, so I had no idea what to expect.  Let me just tell you, these little babies are TASTY!  Sweet crunchy peppers, stuffed with a creamy filling that has a great tangy/smoky combo.  They would make the perfect appetizer for a party, luncheon or baby/bridal shower.  You've got to give these a try.

Ingredients


2 teaspoons olive oil
2 slices turkey bacon, chopped (I used reduced fat center cut bacon)
1 cup chopped red bell pepper
2 green onions, diced
10 pepperoncini peppers, stems removed and roughly chopped
4 ounces light cream cheese
20 mini sweet bell peppers
 
Directions
 
Wash and cut the stems off the mini bell peppers and set aside.  In a non stick skillet, heat the olive oil.  Add the bacon and saute for a few minutes until it starts to crisp.  Throw the green onions and chopped red bell pepper in with the bacon and continue to saute until the peppers are softened.  Scrape the bacon/onion/bell pepper into the bowl of a food processor and pulse a few times.  Add the cream cheese and pepperoncinis to the food processor and pulse till combined. If the mixture is too thick, add a little juice from the pepperoncini jar.  Spoon the cream cheese mixture into a zip top bag.  Snip off a tiny piece of one corner of the bag.  Fill the cavity of each mini pepper with the cream cheese mixture.  Chill the filled peppers until ready to serve, or at least an hour.  (I thought they were even better the next day.)

Tex-Mex Pinwheels

We're big sandwich people at our house.  My husband always keeps a fresh loaf of homemade bread in the box, and sandwiches are made on an almost daily basis.  It's nice that my kids like them so much, packing lunches for them in the morning is a snap.  But every now and then we all need a change.

These little pinwheels were a total hit with kids and adults.  They are full of flavor, but still mild.  They are soft, bite sized and will go a long way when feeding a crowd.  You can't go wrong with favorites like chicken, cheese and olives.  Serve them as an appetizer, or one of the main dishes, you can't go wrong.

Ingredients

8 ounces light sour cream
8 ounces light cream cheese, softened
4 oz can chopped green chiles
1 cup grated cheddar cheese
1/2 cup chopped green onions
1 tablespoon cumin (or to taste)
1 tablespoon chili powder (or to taste)
garlic salt to taste
1 1/2 cups cooked chicken, diced into very small pieces
1 cup olives, diced
5 10-inch flour tortillas

Directions

In a mixing bowl combine sour cream, cream cheese, green chiles, cheddar cheese, green onions, and seasonings to taste.  Then gently fold in olives and chicken.

Divide evenly and spread over each tortilla, leaving about half and inch of space at the edge.  Wrap tightly in plastic wrap and refrigerate for at least two hours (I made mine the day before).  Unwrap, cut into 1-2 inch pieces and serve either cold or at room temp.

Pasta with Ham and Leeks

My mom, who as you know by now, is also a great cook. We love to share ideas and recipes with each other and will go as far as to call each other JUST to talk about some amazing thing we made for dinner last night.

But there is a big difference between my mom and I.  While it's very rare for me to make the same thing twice, even if I love it, my mom will repeat recipes over and over.  I love to tease her about it, but the advantage to repeating recipes several times is that you have those particular dishes down to a delicious art.  It's like going to a restaurant with a really small menu, you know that whatever they do serve is going to be phenomenal.

My mom made this pasta for us the last time we were home and I scarfed it down as if I hadn't eaten in days.  The flavors, the richness, I mean, THIS is a bowl of pasta.  Knowing how much my husband would love it, I made it for him shortly after going home.  Guess what, it wasn't as good.  I hadn't fine tuned it like my mom had.  It's inspired me to work on recipes a bit more when they don't work out as well as I'd like the first time.  Touche mom!


Pasta with Ham and Leeks

Cream Sauce
Ingredients


1 tablespoon olive oil
1 medium onion, finely chopped
kosher salt and pepper
3/4 cup whole milk
4 oz cream cheese, cubed
1/4 cup grated cheese
pinch of nutmeg

Directions

1.  Heat oil in a large skillet over medium low heat in a large skillet.  Add onion and 1/4 teaspoon each of salt and pepper.  Cook, covered, stirring occasionally until tender, about 6-8 minutes.  Stir in the garlic and cook 1 minute.

2.  Whisk in the milk and bring to a simmer.  Whisk in the cream cheese, Parmesan and nutmeg and simmer, stirring occasionally until thickened, 2-3 minutes.  When adding cream sauce to pasta, add reserved pasta water if sauce is too dry.

Ingredients

1 lb Fettuccine, cooked according to directions, saving 1 cup pasta water
1 Tablespoon olive oil
2 leeks, cleaned and chopped into half moons
1 cup frozen peas, thawed
6 oz ham, chopped (I just used deli meat)

Directions

Heat oil in large skillet until hot.  Add leeks and saute until tender, about five minutes.  Add peas and ham and toss to combine.  Add pasta and cream sauce.  Add pasta water if sauce is too dry.  Serve immediately.

Hot Artichoke and Spinach Dip



I LOVE the holidays!! I love the gatherings, the parties, the music, the lights, even the chill in the air and the occasional snow storm. It is, without a doubt, my favorite time of year. And of course, having the love for food that I do doesn't hurt either. The holidays basically hand you a license to go hog-wild in the kitchen, and it's okay! It's the holidays! It would practically be wrong not to.


This is a dip I served for Thanksgiving, which in our house isn't so much an event, as it is a kick-off, to all of the gorging that will happen for the next month. And now that I've made this dip, I can guarantee that it's going to be making a gooey, cheesy appearance often in our household. This is an Alton Brown recipe, which not only has five stars from a million reviews, but it also takes literally two minutes to make. There is no baking, sauteing, or cooking of any kind. Just a quick mix, and into the warmer (crockpot) it goes, providing giddy flavorful love for all in attendance. Make this dip, use carrots, cracker, bread, a spoon, legos, whatever your heart fancies to dip it in. It will all be delicious!


Hot Spinach and Artichoke Dip

Ingredients

1 cup thawed, chopped frozen spinach
1 1/2 cups canned or jarred artichoke hearts
6 ounces cream cheese
1/4 cup sour cream
1/4 cup mayonnaise
1/3 cup grated Parmesan
1/2 teaspoon red pepper flakes
1/4 teaspoon salt
1/4 teaspoon garlic powder

Directions

Heat cream cheese in microwave for 1 minute or until hot and soft. Stir in rest of ingredients and serve hot. Keep in crockpot if you plan to party all night long.

Key Lime Bars


Any Dexter fans in the house? Gosh I love that show, it's got all the elements I love in entertainment, humor, romance, mystery, serial killers, I can't get enough!

But another thing I like about Dexter is that it's based in Miami, and every once and a while they'll throw bits and pieces in about the culture and the food! One particular episode highlighted the Key Lime Pie and a woman's search to find the perfect one. In it she mentioned that it needed sweetened condensed milk to make it the best. Well, after that I became obsessed, must. make. key lime. pie!


I didn't make an actual pie, but I did find a recipe for some great Key Lime Bars to take to a party. They were delicious, tart, creamy and I do have to agree with the character on Dexter, the sweetened condensed milk did make them great!

Key Lime Bars

Ingredients

5 ounces animal graham crackers
3 tablespoons packed light brown sugar
1 pinch table salt
4 tablespoons unsalted butter, melted and cooled slightly
2 ounces cream cheese, room temperature
1 tablespoon grated lime zest, minced
1 pinch table salt
1 (14 ounce) can sweetened condensed milk
1 large egg yolk
1/2 cup fresh lime juice
3/4 cup shredded sweetened coconut, toasted until golden and crisp (I didn't do this, but I have no doubt it would be delicious!)

Directions

1. Adjust oven rack to middle position and heat oven to 325°.

2. Cut about 12" length extra-wide heavy duty foil; fold cut edges back to form 7 1/2" width. With folded sides facing down, fir foil securely into bottom and up sides of 8" square baking pan, allowing excess to overhang pan sides. Spray foil with nonstick cooking spray.

3. In work bowl of food processor, pulse graham crackers until broken down, about ten 1 second pulses; process crumbs until evenly fine, about 10 seconds (you should have about 1 1/4 cups crumbs). Add brown sugar and salt; process to combine, ten to twelve 1 second pulses (if large sugar clumps remain, break them apart with fingers). Drizzle butter over crumbs and pulse until crumbs are evenly moistened with butter, about ten 1 second pulses.

4. Press crumbs evenly and firmly into bottom of prepared pan. Bake until deep golden brown, 18-20 minutes. Cool on wire rack while making filling. Do not turn off oven.

5. While crust cools, in medium bowl, stir cream cheese, zest, and salt with rubber spatula until softened, creamy, and thoroughly combined. Add sweetened condensed milk and whisk vigorously until incorporated and no lumps of cream cheese remain; whisk in egg yolk. Add lime juice and whisk gently until incorporated (mixture will thicken slightly).

6. Pour filling into crust; spread to corners and smooth surface with rubber spatula. Bake until set and edges begin to pull away slightly from sides, 15-20 minutes. Cool on wire rack to room temperature, 1 to 1 1/2 hours. Cover with foil and refrigerate until thoroughly chilled, at least 2 hours.

7. Loosen edges with paring knife and lift bars from baking pan using foil extensions; cut bars into 16 squares. Sprinkle with toasted with toasted coconut and serve. Can refrigerate for up to 2 days, crust will soften slightly. Let refrigerated bars stand at room temperature about 15 minutes before serving.

8.Can make triple citrus bars using 1 1/2 teaspoons each of grated lime zest, lemon zest, and orange zest (mince zest after measuring), and using 6 tbsp lime juice, 1 tbsp lemon juice, and 1 tablespoons orange juice.

Peanut Butter Chocolate Dessert




Do yourselves a favor and don't make this dessert. I wouldn't even continue reading this post if you don't want to get sucked in to making this dessert. You see, this particular dessert is pure evil. Honestly, I don't even remember making it, it was just there, in front of me, forcing me to take one bite after the other! Even when my belly was screaming to stop, I couldn't stop myself from taking just one more bite! It calls to you at inconvenient times, like at two in the morning, when you can't sleep, or while you're on the treadmill, or singing hymns at church. You'll crave it for breakfast, lunch and dinner. And when it's finally gone, and you think you're free of it, it will continue to haunt you, begging you to make it again. And you'll lay awake at night thinking about how much you miss it's rich layers of it's crumbly oreo crust, creamy peanut butter center, chopped peanut butter cups, fluffy chocolate spread and crushed oreo topping.

Luckily I've managed to escape it's evil spell, that's right, I've learned my lesson. I'm never making this dessert aga.....

Peanut Butter Chocolate Dessert

Ingredients

20 oreos, divided
2 tablespoons butter, softened
1 8 oz package cream cheese
1/2 cup peanut butter
1-1/2 cups cups confectioners sugar, divided
1 16 oz carton whipped topping, thawed, divided
15 mini peanut butter cups, chopped
1 cup cold milk
1 3.9 oz instant chocolate fudge pudding mix

Directions

1. Crush 16 cookies (I used my food processor), toss with the butter. Press onto the bottom of ungreased 9-inch square dish.

2. In a large mixing bowl, beat the cream cheese, peanut butter and 1 cup confectioners sugar until smooth. Fold in half of the whipped topping. Spread over crust. Sprinkle with peanut butter cups.

3. In another mixing bowl, beat the milk, pudding mix, and remaining confectioners' sugar on low speed for 2 minutes. Fold in remaining whipped topping. Spread over peanut butter cups. Crush remaining cookies; sprinkle over top. Cover and chill for at least three hours before serving.

Pumpkin Roll



Well, since the consensus from last post is that nobody is getting sick of pumpkin, then I'm not going to feel too bad about posting two very similar things in a row! I actually did make this because I had SO much cream cheese frosting left over from the cake, that I desperately needed something to do with it. I had never made a pumpkin roll before, and in all honesty, they totally intimidated me with all the steps. I was so worried that I was going to put in all the work and then end up with a total disaster on my hands (it's happened once, or twice before!)

But, really it ended up being a pretty easy, I think following the directions well and not getting impatient is the key. If I was as thoughtful as many of you out there, I would have pictures of the whole process for you, but my brain isn't quite that forward thinking yet, I'll get there! My cake did crack just a bit on the top, but after it was sliced, it wasn't even noticeable. Once again, the thing that makes this roll so dang good is that cream cheese frosting, it's the perfect compliment to the pumpkin!

Pumpkin Roll

Ingredients

3 eggs
1 cup white sugar
2/3 cup canned pumpkin
3/4 cup all-purpose flour
1/2 teaspoon ground cinnamon
1 teaspoon baking soda
1/2 cup chopped walnuts
confectioners' sugar for dusting

1 cup confectioners' sugar
3/4 teaspoon vanilla extract
2 tablespoons butter, softened
8 ounces cream cheese

Directions

1. Preheat oven to 375 degrees F (190 degrees C). Grease a 15x10x1 inch baking pan and line with parchment paper. Grease and flour the paper.

2. In a large bowl, beat eggs on high for five minutes. Gradually add white sugar and pumpkin. Add flour, cinnamon, and baking soda. Spread batter evenly in pan. Sprinkle walnuts evenly on top.

3. Bake at 375 degrees F (190 degrees C) for 15 minutes or until cake springs back when lightly touched. Immediately turn out onto a linen towel dusted with confectioners sugar. Peel off paper and roll cake up in the towel, starting with the short end. Cool.

4. To Make Filling: Mix confectioners sugar, vanilla, butter or margarine, and cream cheese together till smooth.

5. Carefully unroll the cake. Spread filling over cake to within 1 inch of edges. Roll up again. Cover and chill until serving. Dust with additional confectioners' sugar, if desired.

Pumpkin Spice Cake with Cream Cheese Frosting




Have we gotten sick of pumpkin yet? I hope not, because I sure haven't! The thing I love about pumpkin is how versatile it is. I've seen it in just about everything, including chili! It's fantastic, and good for you.

I liked this cake for it's "semi-homemade" quality. A boxed spice cake, and a few other ingredients, and you're made in the shade. It's a very soft, velvety cake which is the perfect canvas for that sinfully rich cream cheese frosting. Eat up!

Pumpkin Spice Cake

Ingredients

1 package spice cake mix
3 eggs
1 cup canned pumpkin
1/2 cup water
1/2 cup vegetable oil
1 package instant vanilla pudding (3.4 oz)
1 tsp ground cinnamon
1/2 cup chopped pecans (I used almonds, but I think pecans would be better)
Cream Cheese Frosting (recipe follows)

Directions

1. In a large bowl, combine the dry cake mix, eggs, pumpkin, water, oil, pudding mix and cinnamon. Beat on medium speed for 5 minutes. Stir in pecans.

2. Pour into a greased and floured 10-inch fluted tube pan. Bake at 350 for 45-55 minutes or until a toothpick inserted in the center of cake comes out clean. Cook for 10 minutes before removing from pan to a wire rack to cool completely. Frost cake or serve with whipped cream. Store in the refrigerator.

Cream Cheese Frosting

Ingredients

6 oz cream cheese, softened
1/2 cup butter, softened
2 teaspoons vanilla extract
1/4 teaspoon salt
5-6 cups powdered sugar

Directions

In a large mixing bowl, beat cream cheese, butter, vanilla and salt until smooth. Gradually beat in confectioners sugar. Store in fridge.
