Speedy Chicken Potpie and A GIVEAWAY!!
I think the best way to look at this dish is more as a stew with breadsticks. To me, potpie is covered in a rich and flaky top, and while this is an absolutely delicious stew, it's just not potpie to me. However, don't let that stop you from making this. It's so flavorful, chunky and comforting. My kids gobbled this down and asked for seconds, which means it's definitely going to be a regular at our house!
Speedy Chicken Potpie
Adapted from Cooking Light Jan/Feb 2010
Ingredients
Cooking Spray
1 pound rotisserie chicken, shredded
1/4 teaspoon salt
3 cups fat free chicken broth
1 bay leaf
3-4 peeled, diced potatoes
1/2 onion, chopped
1 cup green beans
3 tablespoons flour
1/2 teaspoon thyme
1/4 teaspoon black pepper
1/4 teaspoon dried rubbed sage
15 ounces pie crust
Directions
1. Preheat oven to 425.
2. Bring 2 1/2 cups broth and bay leaf to a boil in a large saucepan. Add potatoes and onions; cover and cook medium-high for 8 minutes. Stir in greenbeans; cover and cook 2 minutes. Stir in chicken. Combine remaining 1/2 cup broth and flour; stir into potato mixture. Reduce heat to medium; cook 2 minutes until bubbly and thick. Remove bay leaf. Stir in thyme, pepper and sage.
4. While stew cooks, cut pie crust dough crosswise into 12 strips. Arrange on a parchment-lined baking sheet. Bake at 425 for 7 minutes or until browned and puffy. Top chicken mixture with piecrust strips.
Serves 4: 1 1/2 cups stew, 3 piecrust strips
Per Serving: 341cal, 8.5g fat, 30.4g prot, 33.6g carb, 2.5g fiber
Points per Serving: 7

Teresa! How fun!! I would LOVE something like this! I actually really hate cleaning baking sheets. Anyway, I would love to use these for our APPLESAUCE cookies! They are so delicious, but they always stick to the pan. Thanks!

I love my silpat! That size would be perfect for my small cookie pan that I use all the time. I would make cookies, or buns! Hamburger buns!

Pot Pie is usually a butt buster, but this recipe actually looks reasonable. Hurray Cooking Light.

The silpat is probably one of the best inventions ever made. I accidentally cut into the other one I had, so now I'm without a silpat. I'd do anything to get another one so that I can make my biscuits once again. Actually I want to try making candy on the thing.

I've been wanting to get a Silpat forever so I can try making macarons. I don't know why, but I feel like I have to have one to try them!
I freeze cookie dough so that I can make a few at a time. That way we have warm cookies anytime we want, but don't eat too many! Those little silpats would be absolutely perfect! Thank you for this!

I use silpat nearly every day. I make pie crust on it, cookies, you name it!
I love the idea of making the pie crust into sticks! We eat pot pie quite often and it's always nice to have a new way to make them.

This dish looks awesome! I love the idea of a faster version of potpie. Plus you can totally play around with the veggies and seasonings and create new versions each time (a mexican-ish version would be fun).
