CEiMB: Whole Wheat Pancakes with Nutty Toppings



Ellie Krieger impresses again! As I've mentioned several times in the past, I'm not a breakfast person. I've tried, I really have, but I just can't seem to get excited about it. Except for bacon. I really. really. love bacon...

Anyway, because I'm not a breakfast lover, I thought it would be good for me to make these and try something that I would not normally make, especially for dinner, or should I say brinner! They were delicious! I loved the soft sweet apple chunks in the pancakes, but the nutty topping makes them out of this world. It consists of almonds, sesame seeds, pumpkin seeds and wheat germ. I will tell you though, you really have to like nuts if you're going to enjoy the topping. After all the toasting, the nutty flavor is strong, and oh so yummy in that pure maple syrup. When I saw that CEiMB was making these this week I was excited! I've had these on my list to make for a long time. I love breakfast and these look awesome! You have them plated so nice too:D

I just made Ellie's crispy chicken strips, which are coated with corn chex instead of flour or breadcrumbs. They were a hit. I'm really loving her recipes, but I'm afraid to commit to another blogging event.

Your pancakes and topping look really good. I'm with you...having them sometime other than early in the morning sounds wonderful. We had them for brunch on Mother's Day. Nice photo of it all!

These were pretty tasty. I was expecting a strong wwf taste, but thankfully it wasn't there.

I liked the nutty topping IN the pancake.

I love breakfast, but for some odd reason don't like anything sweet in the morning. But brunch, yes, I can see this unusual pancake recipe would be perfect. Lovely maple syrup with all those healthy nust and grains!
