Pepper Jack BBQ Chicken


I loves it loves it when I find recipes that don't require an extra trip to the grocery store. So it was a treat to find this on Kim's blog at The Ungourmet, who found it at Eat at Home. Chicken breast smothered in your favorite bbq sauce (Sweet Baby Ray's), and at the last minute, covered in melty pepper jack. Simple and oh so delicious. We served it with a side of sweet potato fries and watermelon. A classic summer night meal! Thanks Kim and Tiffany!

Your dinner looks fantastic, Teresa. This isn't a complicated chicken dish but it has so much flavor going on. Love the sweet potato fries you served along side.

pepper jack makes everything better, and that's all there is to it. i love sweet baby ray's too. this is a fabulous meal--simple and satisfying!

Oh very nice. I love the simplicity of it. I am going to keep this one in mind when I cold smoke some pepper jack cheese this winter because the extra smokiness would be great.
