A while ago I bought a box of Lipton's Vegetable Flavored Dip and Soup Mix. I had a coupon, so I bought it, with no idea what I was going to do with it. It's an impulse I've stopped fighting a long time ago! Anyway, needing a side dish for our chicken, I thought that perhaps the soup mix would be a nice little coating for the potatoes, so I threw in some garlic and onions, and it turned out delicious. Even the smell coming from the oven was heavenly, it has a very strong and sharp taste, but not too much that your kids won't like it. You could really make this kind of dish about a million different ways, that's what I love about roasted veggies.
Ingredients
4-5 red potatoes diced
1 onion, cut in half and then slice 1/2 inch thick
4-5 garlic cloves, roughly minced
1 packet preferred soup or dip mix
2-3 teaspoons olive oil
3-4 tablespoons water
Directions
Preheat oven to 400. Combine potatoes, onions, and garlic in 8 x 8 pan. Coat with olive oil and toss with dip mix. Pour water into bottom of pan to help steam potatoes. Roast for 8-10 minutes, or until veggies are fork tender. Serve hot.

I love roasted vegetables, I could eat them every day. I usually top them with Penzey's smoky sea salt blend, next time I'll try your version!
Potatoes, roasted, is one of my favorite ways to eat them!! I will have to try these flavorings next time.. they look delicious!
All great meat dishes need taters, taters with onion and garlic are the best taters around!!
Great idea - although I would skip the onions and add more garlic! :D
We use those little packets all the time. They really are great! The potatoes look delicious!

This sounds great. I especially like the fact that you just "winged" it. Some fantastic recipes have been the result of people taking a leap of faith in the kitchen LOL.
Teresa I have been making these potatoes for yrs. Next time you bbq spray some foil with pam and through them on the bbq. Then you don't have to wash a bowl. They look yummy.
Roasted veggies are the best, especially potatoes, onions and garlic.
